I doubt any of the butchers I interviewed for my story on how "traditional butcher shops add prime-cut touches" make bacon like this, but it is an interesting look at mass-produced bacon. Later this week, check back for tales from behind the butchering knife -- otherwise known as my attempt at butchering a pig.
